Baked Cod

This recipe can be used for two people as a main course, or four as one course of a more formal multi-course dinner. 4 cod portions, 8oz each (or any other white fish)
295g condensed cream of mushroom soup
50g ground almonds (almond flour)
50g Cheddar cheese, grated

Method

Preheat oven to 190C, 375F, Gas mark 5.
Place the cod portions in a 1.2 litre (2pt) ovenproof dish and pour the soup over them. Sprinkle top with ground almond and grated cheese and bake in the oven for 20 minutes.
Serve with buttered green vegetables.
