Diabetes Diet Recipes

Fish Courses

Potted Prawns

This recipe can be used as a starter or the fish course of a meal.

200g (7 oz) prawns, frozen
2 tbsp Greek yoghurt, full-fat
1 tsp lemon juice
Tabasco sauce, a dash
3 tbsp dill, fresh
Coarsely ground pepper to taste
80g (3 oz) butter, melted.

Method
Whiz all the ingredients except the butter briefly in a food processor to form a coarse-textured paste.
Spoon into four ramekins and smooth the tops. Pour a thin layer of melted butter over the prawn mixture and chill for 2 or 3 hours before serving.
This dish would normally be served with toast or French bread. However, to reduce the carbs, the Almond, Parmesan pancake is also ideal.

Serves 4; Carb content: 12 grams if bread or toast is used, hardly any if the Almond, Parmesan pancake is.
