Smoked Salmon Parcels

This recipe makes a small, light meal for an evening or as a starter. No cooking is required.

110g (4 oz) cream or curd cheese
2 tbsp creme fraiche (sour cream)
2 tbsp dill, chopped
2 tbsp chives, chopped, plus eight complete chives for tying the parcels.
140 g (5 0z) 4-slice smoked salmon pack
1 packet of salad leaves, or lamb's leaves and rocket (to serve 4)
2 tbsp olive oil and vinegar, French dressing
lemon juice

Method
Mix together the cheese, creme fraiche, dill and chives. Season with pepper
Line four deep bun tins with oversize cling film, then line wit the salmon slices. Fill these with the cheese mixture and fold the salmon over the top, pressing to seal and firm.
Cover with the excess cling film.
Chill in a freezer for 15 minutes then refrigerate for 45 minutes or until ready to serve.
To serve, remove cling film, tie chives crosswise around the parcels, place on a bed of salad, and drizzle with dressing and lemon juice.

Serves 4; Carb content: 1 gram
