Diabetes Diet Recipes

Chicken Tikka Masala

This recipe is quick and easy. It uses ingredients that are readily available in supermarkets, and which don't need much preparation.

There is just one thing to look out for: Make sure that the tikka paste and canned soup doent contain MSG (monosodium glutamate) as MSG is not good for your health.

Ingredients

Lard for frying
4 chicken fillets, cubed
2 tbsp tikka paste
295 g condensed cream of tomato soup
200 ml (7 fl oz) milk

Method
Heat the lard in a large frying pan (skillet), add the chicken pieces and fry for 5 minutes.
Add the other ingredients and simmer for 20 minutes, stirring regularly.
Serve on Almond Parmesan pancakes (see basic recipe 1)

Serves 2; Carb content: 5 g plus soup
