Diabetes Diet Recipes

Salads

Cobb Salad

Ingredients

Salad Dressing:
1/2 cup olive oil
1/3 cup red wine vinegar
1 Tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, minced

Salad:
3 cups romaine lettuce, torn into small pieces
3 cups Boston lettuce, torn into small pieces
3 cups chopped cooked chicken breast, with skin
2 medium chopped tomatoes
1 cup (4 ounces) crumbled blue cheese
6 hard boiled eggs, halved
1 medium avocado, diced
12 black olives (optional)

Method
1. Mix salad dressing ingredients together in a bowl or glass jar with lid. Thoroughly whisk or shake ingredients together. Set aside.

2. Toss romaine and Boston lettuce together. Divide the lettuce evenly between 6 plates or shallow bowls. Arrange a row of chicken, tomatoes, eggs, avocado, and blue cheese on top of lettuce. Garnish with olives if using.

3. Serve salad with dressing.

Variation:
Add 6 slices of chopped ham, goose or turkey to salad.

Serves: 6; Carb Content 8 grams
