Red Cabbage Salad

Ingredients

1 tsp olive oil
1/2 red cabbage, finely sliced
1 apple, peeled and sliced
1/2 teaspoon ground ginger
2 tablespoons red wine vinegar
1 1/2 teaspoons brown sugar
handful fresh parsley, chopped

Method

1. Heat the oil in a wok. When very hot and smoking add the cabbage and apple. Stir-fry for 4-5 minutes.

2. Add the ground ginger, red wine vinegar and brown sugar and cook for 10 minutes, stirring regularly.

3. Serve in a bowl and top with the chopped parsley.

Serves two; Carb content: 4 grams

To this salad can be added eggs, cheese, cold meat, etc.


Perfectly Pink Salad

Ingredients

450g/1lb red cabbage, shredded very finely
1 tbsp tamari soy sauce
1 tbsp cider vinegar
2 raw or cooked apple-size beetroots, peeled and grated
1 orange, zest (peel) grated
2 large oranges, skin and pith removed and flesh sliced
10-12 radishes, grated or sliced thinly
2 tbsp olive oil (optional)
1/2 tsp ground black pepper

Method

1. Place cabbage, soy sauce and cider vinegar in a large bowl. Scrunch and knead together with your hand for a few minutes. Set aside.

2. Gently combine the rest of the ingredients with the cabbage and allow to stand for a few minutes before serving.

Note:

You can serve this on a bed of mixed green leaves, but it looks really stunning on the glossy pink of radicchio.
