Puddings and Sweet Courses

Rich Chocolate Pudding

There can't be many people who don't like chocolate, but normally it has far too high a carb count. This pudding isn't bad.

150g (6 oz) Dark continental chocolate (at least 70% cocoa solids)
284 ml (1/2 pint) double (heavy) cream
250g Marscapone cheese
3 tbsp brandy (optional)

Method
Melt chocolate in a bowl over a pan of simmering water. Take the bowl off the heat and add the cream, Marscapone and brandy. Mix together. The hot chocolate will melt the Marscapone and cream.
Divide into six individual dishes and chill for 20 minutes.
Decorate with whipped cream, or serve with pouring cream.

Note: this pudding is very rich and not to be eaten every day! But it is delicious. (Can be frozen)

Serves 6; Carb content: 12g each
