Diabetes Diet Recipes

Vegetarian Main Courses

Cheese and Broccoli Pizza

Makes enough for 8 people if part of a larger meal. You could also make larger pizzas, to serve as a main meal for 4 people.

Almond and Parmesan Pancake mixture per person (see basic recipe 1).
50g (2 oz) butter
1 medium onion, peeled and chopped
150g (6 oz) broccoli florets
4 large eggs
280 ml (1/2 pt) milk
110g (4 oz) mature cheese (Stilton or similar)
Ready made red pepper or tomato sauce.

Method
Preheat oven to 220C, 425F, Gas mark 7.
Mix the almond Parmesan pancake dough.
Grease eight 10 cm (4 inch) flan tins and spread the pancake mix over the bottoms of each tin. Put in the oven for 2-3 minutes to seal, then remove.
In a saucepan, melt the butter and cook the onion gently until softened.
Cook broccoli in boiling water for 2-3 minutes, pour into a sieve and rinse under cold water. Drain on kitchen paper.
Whisk the eggs with the milk and season with salt and black pepper to taste. Mix the onion in and the cheese and broccoli.
Spoon the mixture into the tins and bake until set and golden (about 25-30 minutes)
Remove from oven and allow to cool a little.
Serve with your choice of ready-made sauce.

Serves 4 or 8; Carb content: Hardly any
