Day Twelve

Breakfast

Half a grapefruit

Breakfast omelette, (see day 9) with different topping.

Lunch

Salad box with 100g (3 ½ oz) M&S tandoori chicken pieces

Dinner

Caribbean Beef Pot Roast

In a frying pan heat 30 g (1 oz) lard until it is hot but not smoking and in it brown four 225g (8 oz) pieces beef braising steak on all sides. Pour the fat from the pan and add 3 tbsp rum. Simmer the meat for 20 minutes, covered, stir in 2 tbsp tomato paste tomato paste and salt and pepper to taste, and continue to simmer, covered, for a further 2 hours, basting occasionally. Remove to serving plates. Stir 8 pimiento-stuffed olives, chopped, into the juices in the frying pan. Reheat if necessary and spoon the sauce over the meat. Serve with three vegetable of your choice. Serves 4.
